For the topping
50 g pistachio nuts, roughly chopped
100 g clear honey
1 tbsp lemon or orange juice
1 Preheat the oven to 180°C (350°F/Gas 4) and line a 2-lb loaf tin with non-stick baking paper or use a loaf tin liner to save time.
2 Cream together the butter and sugar and then beat in the eggs and vanilla extract until the mixture is light and fluffy.
3 Use a coarse grater to grate the whole clementines or orange (skin, pith and flesh) straight into the mixture. Add the, flour, ground almonds and lemon juice and mix gently until combined.
4 Fold the honey into the mixture with the pistachio nuts. Spoon into the prepared tin and bake on a low shelf in the preheated oven for about 40 minutes or until the cake is golden and springy to the touch.
5 Prepare the topping. Toast the pistachio nuts in a dry frying pan for about 4 minutes. Warm the honey and lemon or orange juice in the microwave.
6 As soon as the cake comes out of the oven, pour over the honey and juice mixture, sprinkle with the toasted nuts and leave to cool in the tin.
Miranda’s Tip
For a lovely pudding, bake in a 20-cm round loose-bottomed tin and serve with a bowl of thick Greek yoghurt.
